Try these delicious and filling low-carb vegan recipes for dinner! No matter your taste preferences, you’ll be sure to find your next favorite meal in this article. The following veggie tofu skewers are fun and easy to make!
Serves 2
Ingredients
Easy Tofu Skewers
- 8 oz tofu cubed (225 g)
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 zucchini sliced
- 1 red bell pepper sliced
- 1 yellow bell pepper sliced
- 3 tomatoes sliced
- 1 onion sliced
- Salt and pepper to taste
- 1-2 tablespoons barbecue sauce
Instructions
Place the tofu cubes in a shallow dish and drizzle with soy sauce and sesame oil. Marinate for 15-30 minutes.
Assemble the skewers by alternating between different vegetables and marinated tofu until everything is used up.
Heat a pan or grill until hot, then cook the skewers on each side for a couple of minutes. The vegetables should become soft but not mushy, and the tofu should turn golden brown. Don’t burn anything but get a lovely char if you want!
Enjoy warm with your favorite dips or on a bed of cauliflower rice.
